Fuel your movement recipe of the month: Cod tacos with guacamole

Packed with omega-3 fatty acids, these tasty cod tacos with guacamole will support your brain health (much like exercise does) while delivering a vibrant and delicious meal!

Time: 30 minutes
Yields 2 servings

Taco ingredients:

  • 2 cod fillets (about 1 lb or 0.5 kg)
  • 1 tbsp (15 ml) of olive oil
  • 1 tsp (5.7 g) of cumin
  • 1 tsp (5.7 g) of chili powder
  • 1 tsp (5.7 g) of garlic powder
  • 4 small corn tortillas
  • Salt and pepper to taste

Guacamole ingredients:

  • 1 ripe avocado
  • 1/4 of a small red onion, diced
  • 1 small lime (juice)
  • 1/2 tsp (2.8 g) of garlic powder
  • Salt to taste
  • Optional: chopped cilantro to taste

Optional toppings:

  • Pico de gallo
  • Fresh cilantro
  • Salsa verde
  • Lime wedges

Instructions for making cod tacos with guacamole:

  1.  Preheat a skillet over medium-high heat and add the olive oil.
  2. Season the cod fillets with the salt, pepper, cumin, chili powder and garlic powder.
  3. Cook the fillets for 3 to 4 minutes per side until golden brown and cooked through.
  4. Remove the skillet from the heat and flake the fish into bite-sized pieces using a fork.
  5. To make the guacamole, mash the avocadoes in a bowl until smooth.
  6. Stir in the chopped red onion, lime juice, salt and garlic powder. For extra flavour, add chopped cilantro (optional).
  7. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.
  8. Assemble the tacos by placing the flaked cod in the center of each tortilla and topping it with a spoonful of the guacamole.
  9. Add optional toppings like pico de gallo, fresh cilantro, salsa verde and a squeeze of lime juice.
  10. Serve the tacos immediately with extra lime wedges and salsa on the side if desired.
