Fuel your movement recipe of the month: Veggie and cheese egg bites

A well-balanced diet provides you with essential nutrients that nourish your body and fuel your movement throughout your day. Registered dietitian Trista Chan, MHSc, has teamed up with us on monthly movement-fueling recipes, like this one for veggie and cheese egg bites.   

These high-protein egg bites are the perfect breakfast to keep you energized all morning. Packed with protein, fibre and unsaturated fats, they provide a balanced mix of nutrients to fuel your day and keep you feeling full and focused.  

Time: 45 minutes
Yields 4 servings 

Ingredients: 

  • 6 eggs 
  • 1/2 cup of cottage cheese 
  • 1/4 cup of shredded cheddar cheese 
  • 1 tsp (5 ml) of salt 
  • 1 cup of baby spinach leaves (finely chopped and packed) 
  • 3/4 cup of diced red pepper 

 

Instructions for making veggie and cheese egg bites: 

  1. Preheat the oven to 330°F.  
  2. Spray a muffin tin with nonstick cooking spray or line it with paper liners. 
  3. In a bowl, whisk together the eggs, cottage cheese, cheddar cheese and salt.  
  4. Evenly distribute the egg mixture into the muffin tin, filling each cup about 3/4 full. 
  5. Top each egg bite with the chopped spinach and diced red pepper. 
  6. Bake for 25-30 minutes or until the egg bites are set and slightly golden. 
  7. Tip: To check for doneness, insert a toothpick into the center of an egg bite. If it comes out clean, they’re ready!
